Garden Vegetable Tuna Salad

Introduction

This easy and fresh salad recipe is a perfect quick and healthy meal option for the weeknight. The tuna is seared only momentarily to give it a delicious toasted sesame crust without overcooking the fish. Use up your garden vegetables or head to the local farmers market to serve this tuna over a salad tossed with a ginger soy dressing. Add wonton strips for a little crunch! Ingredients

Tuna Ingredients:

  • 2 lb tuna steak
  • Sesame seeds
  • Oil

Salad Ingredients:

  • Salad greens
  • Your choice of vegetables (Erica recommends: shredded carrots, cucumber, avocado, and bell pepper)
  • Wonton strips

Dressing Ingredients:

  • 3 Tbsp soy sauce
  • 2 Tbsp rice vinegar
  • 2 Tbsp honey
  • 1 tsp minced ginger
  • 1/4 cup sesame oil
  • Optional sriracha, to taste
  • Salt and pepper, to taste

Directions

  1. Mix all the dressing ingredients together and refrigerate until ready to serve.
  2. Heat a cast iron pan over medium high heat.
  3. Add 1-2 tablespoons of oil. 
  4. Coat the tuna in sesame seeds and press with your hand so they stick. 
  5. Sear the tuna steak in the pan for 1-2 minutes per side depending on how you like your tuna cooked.
  6. Toss greens with dressing, top with vegetables of your choice and crispy wontons. 
  7. Slice tuna into thin pieces and serve atop salad.
