Smoked Eel Charcuterie Board


You can make this board your own by adding whatever vegetables, bread, cheese, or crackers you like! 


  • 1 lb smoked eel fillets
  • Olives
  • Cucumbers
  • Radishes
  • Dill
  • Red onion
  • Green beans
  • Baguette
  • Soft cheese of choice
  • Hard cheese of choice


  1. Heavily salt a pot of water and bring it to a rolling boil.
  2. While water comes to a bowl make an ice bath.
  3. Trim rough ends of green beans.
  4. Add green beans to boiling water and cooking for 2-3 minutes, just until green beans are bright green and crisp tender.
  5. Add to ice bath to stop cooking, drain and use immediately. 
  6. Slice smoked eel fillets into smaller chunks to accommodate your other accoutrements.
  7. Thinly slice onions, radishes, olives and cucumbers.
  8. Crumble and slice your choice of hard and soft cheese.
  9. Toast slices of baguette.
  10. Arrange all your ingredients on a large board and garnish with sprigs of dill.
