Seared Scallops With Marinated Cabbage

Ingredients

  • 3 cups red cabbage, thinly sliced
  • 3 cups green cabbage, thinly sliced
  • 1 cup sliced scallions
  • 2 Tbsp toasted sesame seeds
  • 1 Tbsp chili flakes
  • Micro greens or sprouts of your choice for garnish
  • 1 1/2 tsp sea salt

Cabbage dressing ingredients: 

  • 1/2 lemon, juiced
  • 1/2 lime, juiced
  • 1 1/2 Tbsp rice wine vinegar
  • 1 tsp honey
  • 2 tsp sesame oil


Directions

  1. Add sliced green and red cabbage in a large bowl with water. Allow to site for 30 minutes.
  2. Drain water and toss with salt.
  3. Mix lemon, lime, rice wine vinegar, honey, and sesame oil until honey dissolves. 
  4. Mix and coat cabbage with sauce then let sit, turning every few minutes while preparing rest of recipe.
  5. Heat 1 Tbsp of oil in a cast iron or sauce pan over medium heat until it's hot (barely smoking).
  6. Place scallops in pan dry side down and allow to sear. Tilt pan side to side occasionally to allow oil to run around the scallops. Cook for 3-5 minutes until scallops have a deep golden brown sear on them.
  7. Remove pan from heat, flip scallops in pan and allow to continue cooking for about 2 minutes. 
  8. Pro Tip! If you are careful not to burn the oil, you can deglaze the pan with 3 Tbsp of lemon juice and 3 Tbsp of butter for a delicious sauce to pour over the top of your meal when you have removed the scallops. 
  9. Serve scallops on top of marinated cabbage and top with remaining ingredients. Enjoy!
