Ingredients
- 4 tbsp. vegetable oil or other neutral high- smoke-point oil, such as grapeseed or sunflower oil
- 2 tbsp. thinly sliced shallot
- 3 tbsp. fresh lime juice (from about 2 limes)
- 2.5 tbsp. fish sauce
- 1 to 2 hot chiles, such as serrano or bird’s eye, thinly sliced (including seeds)
- 1 tbsp. sugar
- 2 tbsp. roughly chopped fresh cilantro
- 1 tsp. grated lime zest
- 1 bunch asparagus, trimmed
